Food & Beverage Spotlight: Evangeline's Cafe

Downtown St. Pete's food and beverage scene keeps getting more exciting, and we're kicking off a new series to highlight it. In our first Food & Beverage Spotlight, we sat down with Evangeline Fox, owner of Evangeline's Cafe, a mobile coffee truck built out of a converted Japanese kei truck, set to launch soon in downtown St. Pete.

What would you like the community to know about your business?

Evangeline's Cafe will serve espresso-based drinks with beans sourced locally from Hogg Batch, just down the road. "The one thing I really love about coffee is that it creates community," Evangeline says. "A small cup of coffee means so much to somebody, and that's what I want to do, be a part of the community and share it." She's also planning pastry collaborations with local bakers down the line.

What made downtown St. Pete the right fit for you?

Evangeline moved to St. Pete in 2019 to attend Eckerd College, and after growing up as a military kid living across the East Coast, the city stuck with her. "St. Pete is amazing. There's no cookie-cutter restaurants, just local businesses," she says. "It's got that punk charm, there's art, there's music. It's the coolest place I've lived."

What can people expect when they find your truck?

A rustic, one-woman-show setup with Evangeline running the truck herself, and a mobile format that lets her show up wherever the community is, from local markets to events around town. "I want it to be a center point where people can come together," she says, describing her vision as a mobile third space for the neighborhood.

What are you most excited about as you get started downtown?

"I'm most excited to see everybody's face and share a delicious cup of coffee with them," Evangeline says. After years working her way up through other local cafes, she's looking forward to finally running things her own way and building the kind of loyal, connected customer base a truck can only earn by showing up again and again.
